I mash incredibly hard when the swift sail bidding game happens, but sometimes (maybe always?) a person manages to get 3 rupees before I can complete the bar. Is it basically a guarantee to get the bid at 103 rupees?

Are there any other guarantees? Because after it goes to 103, no one should ever bid afterwards, since they will (should) be stunlocked for the remainder of the bidding process?

Also, if you stun the crowd prematurely before they finish being dizzy, does the stun add on to the previous, become nullified, or is X as ineffective?

If you stun prematurely, the stun will start over. It doesn't get nullified and it doesn't stack. So ideally you want to bid right at the end of the stun period. Around the 30 second mark, one of the bidders will bid quickly after the stun period is over. The timing works out so that you can bid about 1 second early each time and still get pretty close to optimal. Anything under 170 rupees is a good final price.
